How We Met
The love story of The Future Mr. & Mrs. Norman Beltran Jr.: Norman and I can say that we share the same alma mater, St. Mary’s University in San Antonio, TX, but it wasn’t necessarily our college days that brought us together as a couple, since we are three years apart. To make a long story short, it was actually our college best friends who later brought us together and it all came together perfectly, when the timing was just right.
It was June 2015 and I was actually living back home in El Paso, TX (where I still currently live as of now) and I was very dedicated to working with my family business. Norman was living in San Antonio, TX (where we plan on living now) and he was settled in and working at a law firm. Norman and I had a mutual group of sorority/fraternity friends which all had also graduated from St. Mary’s. Although, we had shared friendships, it wasn’t until late June that I discovered (thanks to the best of friends) that Norman had a crush in our group and that crush was me.
Norman made the first move and asked me out for dinner for our first date. I sadly, let him know that I was traveling a lot for work and that weekend I was going to be traveling to Corpus Christi, TX. Surprisingly, he replied and said that he would also be in Corpus Christi, TX that same weekend for his nieces birthday party, so it was official, we had set our first date. Talk about meant to be.
Our first date was just the beginning of a whirlwind of perfect dates. I continued to live in Corpus Christi for work that summer and Norman took every opportunity to drive from San Antonio to spend the weekend with me. Before we knew it, most of our dates which I liked to call adventures, involved some type of traveling or events. Some of our favorite include, a boys weekend in Houston, late nights on the beach in Corpus, a family wedding near Alice where I met his family, a trip to Elephant Butte lake to meet my family, and the best vacation to Orlando, FL with our best friends. Not only did we seem to fit in with each other’s families, we already shared the same group of friends so that made it even better.
Our somewhat of a long-distance relationship has never stopped us from spending no more than two or three weeks apart. Norman and I knew we wanted to start a life together shortly after we started dating, and I’m so grateful to have fallen in love with the most loving and supportive fiancé. He has supported me and my goals from day one and I want nothing more than to be a constant supporter in his life too. The best feeling is to know that someone cares for you, just as much as you care for them, and all you want to do is make each other happy.
Since the day we had our first date, I’ve found a piece of my life that always felt like it was missing. I can’t wait to be on this journey with him and I feel so proud to be his future wife.

July 21, 2016; A much anticipated day in the life of Kari and Norman (my future fiancé.) We’d anxiously been waiting for this day to arrive. It was finally the day we would fly to Cancun, check-in to our all-inclusive resort, drink endless margaritas, watch the sunset on the beach and celebrate our one year anniversary weekend. The beach, a margarita, and the love of my life…I already felt like the luckiest girl in the world, but little did I know, Norman had secretly planned more than I could have ever expected.
Once we arrived in Cancun, we were in awe of the gorgeous ocean view from our room at the Hyatt Zilara Resort, so we decided to head straight to the beach and find some drinks. To my surprise, Norman had reserved a romantic dinner on the beach later that evening, so we had a few drinks by the pool before it was time to get ready for dinner. As usual, I had over packed for the trip so I had plenty of outfits to choose from, but the real problem was going to be how to control my frizzy hair in the humidity. Surprisingly, I didn’t think twice about it, I was just happy to be in Cancun with my best friend.
We were seated under a beautiful linen draped canopy, a table for two with the chairs set facing the most amazing beach sunset I had ever seen. As my first reaction, I looked at Norman and said “OMG, this feels like we are on one of those picture perfect dates that would be planned on The Bachelorette.” As our servers poured two glasses of wine and began the 5-course dinner, we couldn’t help but reminisce on the past year, especially since most of our first dates were spent on the beach in Corpus Christi, TX. The setting was truly perfect.
As we continued to talk about how much we’d fallen in love over the past year, a resort employee approached the table asking if we would like to have our picture taken (and anyone who knows me, knows I love pictures.) So obviously, I didn’t think twice about it and we happily turned to the photographer. She directed us for the first three shots and next thing you know, Norman is down on one knee asking me to spend the rest of my life with him.
I could try to put my reaction into words, but I’ll just have to let the pictures speak for themselves. (see below) I was completely speechless, before I said YES! I don’t know if I’ll ever forget the pure joy I felt in this moment. I knew early on that Norman was the one for me and making it official turned out to be the BEST day of my life.
It was hard to focus on dinner with this shiny new bling sparkling on my left hand. I was so happy. We finished our dinner, took plenty of pictures (aka lots of ring selfies), and toasted our engagement with two shots of tequila brought out by the kind servers. You always wonder what this moment will be like and I never wanted it to end.
Once back in our ocean view room, we spent the rest of our night sharing the news with our family and friends on FaceTime. Our moms cried, our dads wished us the best, and our sisters, brothers, grandparents, best friends all had the sweetest reactions. It was really a special moment to get to talk to our closest loved ones; moments that I will never forget. I’m so happy we took the time to call everyone, because since we were out of the country and had limited access to Wi-Fi, it turns out that everyone had anxiously been waiting for the exciting news. We can’t thank them enough for all of their love and support, it means the world to us.
I can easily say that the rest of our trip was everything we imagined it to be. We spent our days relaxing in the cabanas by the pool, watching the sunrise from the hammock on our balcony, snorkeling while on a catamaran cruise to the island of Isla Mujeres, touring the town in a golf cart, sampling tequila, and swimming in the calm beautiful blue waters. The last days went by way too fast, but when it came time to head home, we were just as excited to be home to announce the good news and celebrate.
Everyday since our trip has been such a blessing. I am overwhelmingly excited to be able to start planning a wedding with the love of my life, but it all feels like it is already happening way too fast. I’m so thankful for each day and so grateful to have these proposal memories to look back on. Our trip to Cancun will always have a very special place in my heart.
